Dijon Chicken Salad
Well folks, we’ve come to the end of the 6 Week Challenge Recipes. For those who aren’t following along, my husband and I lost a combined 45 lbs over the course of 6 weeks just by changing our diet. I’ve been blogging the recipes we used along the way (you can find them here).
We discovered this chicken salad towards the end of our challenge, and I am so glad we did. This is an adaptation of someone else’s recipe that I can’t find again. If this looks somewhat familiar to you, I’d love to credit the original!
I did make some pretty hefty changes to bring it in line with our diet, but the flavor on this is absolutely delicious. I also love that I can just throw chicken in the crockpot at the beginning of the week, then toss it in this sauce to create a completely different flavor.
Dijon Chicken Salad
Ingredients
- 6 oz cooked chicken
- ½ tsp dijon mustard
- 1 tsp Worcester sauce
- ½ tsp lemon juice
- garlic powder salt, and pepper to taste
- 1 cup salad veggies
Instructions
- Mix together mustard, Worcester sauce, lemon juice, and spices.
- Toss cooked chicken in sauce.
- Top salad veggies with chicken.
- Enjoy!
