What to say about this recipe? It’s so simple that it feels like not much. But this little powerhouse was probably our most-eaten meal during the 6 Week Challenge, precisely because it’s so simple. We had this one for both lunch and dinner, and it’s still my go-to for a fast and easy meal even though we’re along ways out from our challenge.
Even though turkey taco salad is so simple, it’s really very good. The taco flavoring on the turkey has enough umph to carry the salad part without any dressing. I love pairing pico de gallo with it (with or without the avocado, depending on whether or not I had fats left :)) This throws together in minutes, and is super delicious even when reheated.
So yeah, turkey taco salad: an obvious and simple meal. Add it to your rotation. You won’t be disappointed.
