Honey Lime Chicken
Grilling season is back! And you need this honey lime marinade in your grilling rotation. It is the perfect combination of sweet and tangy, and creates a gorgeously juicy and flavorful chicken. We used it on chicken tenderloins (I’ve actually never had these before, but they were on sale and I love that they are slightly smaller than a standard breast. Better for portion control!). It is definitely in top place for chicken marinades and I am so looking forward to grilling again.
We served these with some delicious green beans, a recipe for which I’ll be sharing soon. We also partnered them with rice, making this a pretty darn healthy meal, and really, genuinely good. I don’t know why I’m always surprised when something is both good for me and yummy, but the more I try to cook healthy, the more I find that they’re not mutually exclusive 🙂
Honey Lime Chicken
Ingredients
- 4 chicken breasts
- ¼ cup honey
- ¼ cup lime
- 2 tsp garlic powder
- 1 tsp pepper
- 1 Tbsp soy sauce
- 2 Tbsp olive oil
- ½ cup water
Instructions
- In a Ziploc bag, mix together all ingredients, making sure the honey completely dissolves.
- Place chicken breasts in bag and massage marinade into them.
- Place in refrigerator for 1 hour to overnight, turning halfway through.
- Grill chicken, or bake at 400° for 15-20 minutes or until chicken's internal temperature reaches 160°.
