Crockpot Pork Chops and Wild Rice

If you want maximum flavor with minimal effort, this easy pork chops and rice recipe is for you! This simple recipe is only 3 steps, a total of 5 minutes of hand-on time, and you get juicy pork chops and creamy wild rice. This is exactly the great dinner you want to come home to at the end of a busy day!

Ingredients

This easy recipe involves minimal ingredients, and you can dump it in the crockpot and let the slow cooker do its magic!

Ingredients for recipe
  • Pork Chops: You can do this with either bone-in pork chops, or boneless pork chops. I like the recipe best with thick pork chops, because the slow cooking make them come out perfectly!
  • Cream of Chicken Soup: You will need 2 cans of this soup. You can sub with a can of cream of mushroom soup or cream of celery soup, or even experiment with mixing cream soups. If you want to make your own, this cream of “anything” soup is delicious!
  • Onion Soup Mix: You’ll need 1 packet of onion soup mix for this recipe.
  • Chicken Bouillon: You can also use chicken broth or vegetable broth with this. The recipe comes out salty, which my family likes, so if you want to cut salt, you can use a no salt added or low sodium broth.
  • Wild Rice: You will need one box of Uncle Ben’s Wild Rice mix. You will not be using the seasoning packet —  you can throw that out, or keep it flavor something else!

Instructions

Step 1 | Cook the Pork Chops

Start by spraying your crock pot with cooking spray. I don’t sear my pork chops before I put them in the crockpot, but if you want to, you can sear them in a large skillet over medium-high heat. Personally, I don’t find this makes a huge difference, so I skip it. In fact, I often make this recipe with frozen pork chops!

Place pork chops on the bottom of the slow cooker. In a small bowl, mix together the condensed soup and onion soup mix. Pour the soup mix and the chicken broth/bouillon + water over the pork chops.

Cook the pork chops

Place the lid on the crockpot, and let the chops cook for 3-4 hours on high, or 6-8 hours on low.

Step 2 | Cook the Rice

About 1 hour before you want to serve this, remove the pork chops from the crock pot and put them on a a plate. Add the wild rice to the gravy in the crockpot and stir in. Put the pork chops back in, replace the lid, and let the whole thing cook for that last hour.

Cook the rice

Step 3 | Serve and Enjoy!

You can serve this right from the crockpot — just fluffy the rice mixture a bit before serving. I like to sprinkle fresh thyme over the top of the pork chops, and top the creamy rice with black pepper. We pair it with a steamed vegetable like green beans to make a complete meal!

Variations

You can use this base crock pot recipe to make a few different versions:

  • Change the protein: Chicken breast or thighs can be subbed for the pork chops. You can also do this with pork tenderloin.
  • Change the rice: You can do this with white rice and brown rice. Simply use your chosen rice in a 1:1 ratio in place of the wild rice. Do NOT use minute rice — it will come out mushy.
  • Mix and match cream soup: For a different flavor combination, try a can of cream of chicken soup and a can of cream of mushroom. Or sub one or the other for cream of celery!

While I wouldn’t recommend doing this in the crockpot, you could also cook egg noodles seperately, then serve the pork chops with their gravy over the noodles and omit the rice entirely!

FAQs

Do I need to sear the pork chops before putting them in the crockpot?

Searing the pork chops before placing them in the crockpot is optional. Searing can add extra flavor, but if you’re short on time, you can skip this step.

Can I make this recipe ahead of time?

Yes, you can prepare the ingredients in the crockpot the night before, store it in the refrigerator, and then start cooking the next day. Alternatively, you can fully cook the dish and reheat it when ready to serve.

What do I do with leftovers?

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or on the stovetop, adding a little extra liquid like broth or water to keep the rice from drying out.
