Slow-Cooker White Chicken Chili
I love soup! It’s so easy to make and it feels so comforting when the weather’s gray and dreary. My husband only wants to eat chili though, so I’ve been experimenting with different kinds. This white chicken chili is a slow-cooker friendly meal with a ton of flavor!
It’s not super thick, so it’s actually more of a soup (I guess “white chicken soup” just doesn’t have that same ring). It is packed full of tons of protein, though. Between the white beans and the chicken, this soup is very, very satisfying. I love it because it’s super simple, but it packs a flavorful punch. And it’s even better as a left over, at least, I think. The flavor will intensify over night, and I absolutely love the extra kick.
This soup tastes great with a dollop of sour cream and some fresh-squeezed lime juice. If you’re serving it for company, consider garnishing with some cilantro. It’s an easy way to look gourmet!
Slow Cooker White Chicken Chili
Ingredients
- Slow-Cooker White Chicken Chili
- 2 chicken breasts
- 1 can diced green chilies
- 1 can white or great northern beans
- 1 packet white chicken chili seasoning
- 4 cups water
Instructions
- Place all ingredients in slow-cooker. Allow to cook for 6-8 hours on high or 4-5 hours on low. Remove chicken from slow-cooker.
- Shred chicken and return to slow-cooker.
- Serve with cheese, sour cream, and tortilla chips.
