Easy Caramel Apple Pie Bites

Miniature apple pies in a muffin tin. Juicy apple filling, tangy caramel, and flaky pastry crust make for the perfect fall treat!

Ingredients

Crust

  • 2 cups flour
  • 1 tsp salt
  • cup butter flavored shortening
  • 5-6 Tbsp water

Apple Filling

  • 4 medium apples
  • ¼ cup butter
  • ¼ cup brown sugar

Toppings

  • caramel sauce for drizzle
  • vanilla ice cream or whipped cream

Instructions

  • Preheat oven to 400°.
  • Core, peel, and chop the apples into small pieces.

  • Microwave the butter in a large microwave-safe bowl.

  • Stir in brown sugar until dissolved.

  • Stir in apples and make sure they are covered with the butter mixture. Set aside.
  • Mix the flour, salt, and shortening until you get a dry dough.

  • Add water 1 Tbsp at a time, mixing between, until dough begins to clean the sides of the bowl.

  • Turn the dough out onto a floured surface and knead until smooth.
  • Roll the dough out to 1/4" thickness. Cut into circles.
  • Grease and flour a muffin tin. Press the circles into the prepared tin to form cups.
  • Fill with apple mixture. Be careful not to overfill!
  • Bake at 400° for 25-30 minutes, or until apples and pastry are golden brown.
  • Allow pies to cool slightly, then drizzle with caramel sauce and top with ice cream or whipped cream.
