Preheat oven to 400°.
Core, peel, and chop the apples into small pieces.

Microwave the butter in a large microwave-safe bowl.

Stir in brown sugar until dissolved.

Stir in apples and make sure they are covered with the butter mixture. Set aside.
Mix the flour, salt, and shortening until you get a dry dough.

Add water 1 Tbsp at a time, mixing between, until dough begins to clean the sides of the bowl.

Turn the dough out onto a floured surface and knead until smooth.
Roll the dough out to 1/4" thickness. Cut into circles.
Grease and flour a muffin tin. Press the circles into the prepared tin to form cups.
Fill with apple mixture. Be careful not to overfill!
Bake at 400° for 25-30 minutes, or until apples and pastry are golden brown.
Allow pies to cool slightly, then drizzle with caramel sauce and top with ice cream or whipped cream.
