Microwaved Baked Potatoes
Put dinner on the table in 10 minutes or less! These microwaved baked potatoes are fluffy, delicious, and don’t heat up your house.
School has started yet again, which means my appetite for cooking is gone. Don’t get me wrong — I still want to eat. I just do not want to cook at all. The baking bug will bite around December, and I love grilling in the summer, but right when school begins and we’re getting used to new schedules, new homework, and new lives, I just don’t have a enough left to plan and cook extensively.
So, my newest thing is 10 minute dinners. Last year’s pandemic taught me to use Doordash, and that tends to be my cop-out when I don’t want to make dinner. The rule with my latest meal planning is that it has to be faster than Doordash. Of course the regular rules of being something that tastes good and that my family will eat also apply.
These microwaved baked potatoes are faster than Doordash, and they can be dressed up in so many (fast!) ways. I serve them buttered up with a side of bagged salad and some kind of fruit to make a complete meal. I’ve also served them covered with a can of heated up chili, and they also make a good base for twice baked potatoes, if you want to put the time and extra effort in.
Microwaved Baked Potatoes
Ingredients
- 1 baking potato
Instructions
- Start by washing your potato well.
- Stab the potato several times with a fork, then wrap with a paper towel and place on a plate.
- Microwave for 5 minutes. Check to see if potato is soft. If potato is not fully cooked, continuing microwaving in 1 minute bursts.
- Allow potato to rest for a minute or two, then add toppings and enjoy!
