Lately, we’ve been having a game night with other families with small children. We put on a movie downstairs so no one has to fork out for a babysitter, and then play board games at the kitchen table. For Dustin and I, it’s been a really nice sort of thing. We get to have adult talking time, our kids have friends to “play” with (steal toys from, mostly), and we enjoy playing games and laughing. It’s a lovely little stress-free way to do things.

Why am I talking about game nights? Two reasons – if you’re in the little kid trenches, it’s something to think about. It’s a low-key, low-cost way to enjoy yourself with others, and sometimes you really need that.

The second reason is these cookies. I thought cake mix cookies were something everyone was familiar with, but it would seem I was wrong. I did these for the last game night as a treat, and they were a gigantic hit. You’d think I’d done something gourmet by the response.

So I figured I’d share the secret to 3 ingredient “gourmet” cookies. The other lovely thing about this recipe is that it is so versatile. I’ve never met a cake mix this recipe doesn’t work for, so any cake flavor is an option for you. And then, you can get funky with the mix-ins. For game night, I did yellow cake mix with sprinkles mixed in, and chocolate with chocolate chips and pecans. Other delicious flavor combinations we’ve tried are red velvet or strawberry with white chocolate, spice cake with nuts, chocolate rolled in powdered sugar, yellow rolled in cinnamon sugar, and lemon with a powdered sugar glaze drizzled on.

Ingredients

  • 1 box cake mix
  • cup oil
  • 2 eggs
  • mix-ins: chocolate chips, sprinkles, nuts, etc

Instructions

  • Mix together cake mix, oil, and eggs.
  • Add in mix-ins
  • Roll into 1-inch balls and placed on lined or greased cookie sheet.
  • Bake at 375° for 8-10 minutes.

    1. Specialty cake mixes tend to act differently. I’m not familiar with how Swerve acts during baking, so I’m afraid I can’t help much. Good luck in your baking endeavors!

    These are good! I made the chocolate ones with chocolate fudge cake and chocolate chips. So easy, incredibly delicious. I make mine slightly bigger so of course cooking time increases, but thank you for sharing this simple but delicious recipe that my whole family enjoys in less than 15 min. 🙂

  3. Made these a few weeks ago…..making them again tonight!
    I’m using a sugar free devils food cake mix.
    Is it just me or is it impossible to get the batter mixed with only 1/3 c oil and 2 eggs?
    Both times I’ve made them I had to add additional oil. Maybe I should add an egg instead?
    Could it be because of the SF mix?

    1. It’s entirely possible the mix is affecting things. I’ve never tested this with a sugar free mix! I did a quick search, and the sugar free recipes I found all used 2 eggs, so I think your instincts may be right on this one. If you try it, will you let me know how it goes?

  4. They turned out great! Unfortunately I didn’t measure the extra oil I added but I’m guessing it was 1-2 Tablespoons. The batter was still a bit too stiff to add mixins so I placed Lilys no sugar added semi-sweet chocolate chips on top of each cookie before baking.
    Even took a photo but do t think I can share here?

    Yummy “kid” cookies. Mine did not spread, so we’re way to Casey for me. I used Betty Crocker cake mix. Should I add more oil?

    I made a chocolate cake with chocolate fudge cake and chocolate chips. easy and incredibly delicious. I make mine a little bigger, so the cooking time will naturally be longer, but thanks for sharing an easy and delicious recipe that the whole family can enjoy.
