Beef and Broccoli Stirfry
If you’ve been following this blog, you know I’ve struggled with my weight. My metabolism seemed to slow down and basically stop after having my children. After Faith, I was at my highest – 200 lbs. I couldn’t believe it. I spent the next year dieting and doing cardio-based program after cardio-based program, and I only could get rid of about 15 lbs, no matter how hard I tried. And if I stopped counting every calorie? It all piled right back on.
Then I hurt my back, and lost literally everything I’d worked the entire year for. I was at an all-time low. So I joined a 6 week challenge at a local gym on a whim. I was terrified when I walked in for orientation. I wasn’t even sure my body could lose weight at this point (spoiler alert: it could).
They handed out a diet plan that was super simple – easily the simplest I had seen at this point. And it allowed for a lot of creativity. Somehow that was encouraging, and I set to work.
This is one of the first recipes I came up with that we genuinely enjoyed. This beef and broccoli stirfry gave us hope that we could be healthy and not hate every minute of it. It’s a simple recipe, so simple it actually feels a little silly writing it up as an actual recipe. I would bet you have everything you need in your cupboard/fridge right now.
For the next few weeks, I’m going to be sharing the recipes I used for the 6 week program. All in all, I lost nearly 20 lbs during that time. My husband lost 26. We did strength/cardio mix workouts 3 times a week, and ate simple, high protein meals. That was it. The meals I’m sharing were things we enjoyed and would eat normally. Many of them are extremely simple (like this one), and not super fancy at all.
Anyway, let’s kick it off with the one that started it all: the gorgeous and delicious Beef and Broccoli Stirfry!
Beef and Broccoli Stirfry
Ingredients
- 12 oz ground beef
- 2 cups broccoli
- 1 Tbsp low-sodium soy sauce
- 1 tsp garlic powder
- 1/4-1/2 tsp crushed red pepper flakes
- 2 Tbsp olive oil
- ¼ tsp curry powder
Instructions
- Steam broccoli
- In a pan, brown ground beef.
- Add broccoli and olive oil and stirfry for 1-2 minutes.
- Add soy sauce, garlic powder, pepper flakes, and curry powder.
- Continue to stiry fry for 1-2 minutes more.
- Serve.
Notes
A serving of ground beef is 6 oz, and a broccoli serving is 1 cup, if you need that for serving purposes!
