Baked Parmesan Zucchini Fries
Zucchini fries are fast becoming my new favorite side. Not only do we have a very, very large supply of zucchini (who knew one plant could make so much?), but these are so darn easy, and they up our vegetable intake. They a great replacement for potato-based fries. Not that they taste the same, but they’re finger foods, and tasty in their own right, so it works out pretty well.
I’ve never really liked zucchini outside of bread and cakes – it has basically no flavor, if you ask me. So it was with great reservations I made an attempt at these. However, with the parmesan cheese, garlic, and pepper, lack of flavor is no problem at all.
Just a tip we’ve noticed: these taste best fresh, and aren’t the best at keeping overnight in the fridge. As much as my family has liked them, though, that hasn’t been much of a problem!
