I feel like I’m pretty good at providing yummy meals for my family, but one thing I could work on is incorporating more veggies. It’s kinda difficult, because Dustin will eat basically no veggies, and Alex has decided that he wants to be just like daddy in that regard. Faith’s good with formula, so that leaves me eating any veggie dish I make.
So this is my challenge: make vegetable dishes that are delicious enough to get the boys in the family on board. I’m also trying to avoid heavy sauces and cheese, because, quite frankly, that feels like cheating.
These green beans are steamed, then covered in a light butter-garlic sauce that is mouth-wateringly delicious. I use frozen green beans so that I can make these year-round – and, of course, it’s cheaper that way!
