Double Chocolate Snack Cake

 

I love anything that makes my life easier, and this snack cake mix is right up there at the top of ways to simplify things. I love having little baggies of this around. It’s come in hand more than once when I realized I’d signed up to bring a dessert, and I’d completely forgotten (I do this so often, it’s a joke around our house. Maybe I should invest in a planner…). Once you’ve got the mix around, snack cakes only take a minute or two of mixing, and then you’re down to baking time making it one of the easiest and quickest desserts I know!

Right now, I only know how to make double chocolate snack cake because I kind of got stuck on it due to how decadent and delicious it is. But now I’m branching out. Between us, I can tell you that an applesauce and vanilla version are in the development process. I also have my eye on lemon, so watch this space for more options (and suggest any you’d like to see in the comments!).

Update: While vanilla has never worked out, you can check out the posts for applesauce, lemon, and pumpkin, all of which are my favorites depending on which day you ask 🙂

In the meantime, you definitely want to try this double chocolate version. It’s topped with chocolate chips, which melt down during baking and turn into this amazing sort of gooey frosting. The walnuts add a crunch, which I really enjoy, and the base is deeply chocolate flavored and kind of light and fluffy. It’s seriously sooooo good!

Double Chocolate Snack Cake

Prep Time 10 minutes
Cook Time 35 minutes
Total Time 45 minutes
Servings 9

Ingredients

  • 1 pkg Snack Cake Mix
  • 2 Tbsp cocoa
  • ¾ cup water
  • 1 egg
  • cup oil
  • 1 tsp vanilla
  • ½ cup chocolate chips
  • ½ cup walnuts

Instructions

  • Mix together all ingredients except chocolate chips and walnuts until well combined.
  • Pour into greased 9x9 pan.
  • Top with chocolate chips and walnuts.
  • Bake at 350° for 30-35 minutes or until toothpick inserted in the center comes out clean.
