Make Ahead Breakfast Quesadillas
So Dustin and I are trying to eat healthier (story of our lives, right?). We have a problem though – with two kids now, and a morning gym schedule, early work call, and sleepless nights, nobody is up for cooking in the morning. And most healthy breakfasts require cooking.
So we have entered the world of make ahead breakfasts. One of our favorites is this Sweet Potato Hash from The Kitchn. Seriously, so good. Our other favorite is this one: Make Ahead Breakfast Quesadillas. These can be frozen for up to one month and only take a few minutes to make in the afternoon one day. Just toss them in the microwave for a few minutes in the morning, and you are good to go.
One of our favorite things about this breakfast is that it contains a nice serving of veggies, and you’d never know. The spinach and onions mix right in with everything else, and become a painless way to get your veggies. Talk about starting the day off right!
Make Ahead Breakfast Quesadillas
Ingredients
- 4 eggs
- 2 Tbsp milk
- ½ cup black beans
- ½ cup corn
- ½ cup spinach chopped
- ½ onion chopped
- ¼ cup taco seasoning
- 4 to rtillas
- 1 cup grated cheese
Instructions
- In a bowl, mix together the spinach, onion, black beans, corn, and taco seasoning.
- Beat together eggs and milk, then scramble them.
- Split the eggs between the four tortillas, then top with the bean mixture and cheese.
- Fold tortillas over and freeze in a freezer-safe bag.
- To reheat: Thaw overnight or defrost in a microwave. Microwave for 2 minutes or until cheese is melted.
