Light and Fluffy Waffles
Sundays in college always started with my roommate Melissa’s amazing waffles. They were light, fluffy, and deliciously golden. She gave me her recipe and I recently came across it in one of my old cookbooks. I made them and they were just as incredible as I remembered, but then I found the catch. Each one cost me somewhere around 400 calories (eeeek!). That’s before adding any toppings.
Experimentation ensued, and the recipe below is still fluffy and tasty, but comes in at a more reasonable 230 calories per serving. Add a little peanut butter and some strawberries, and you have a delicious 400 calorie breakfast.
Light and Fluffy Waffles
Light and fluffy waffles you don't have to feel guilty about!
Servings 4
Ingredients
- 1 ¾ cups flour
- 1 ¾ cups skim milk
- 2 eggs you can beat the whites separately before adding for extra fluffiness
- 3 tsp baking powder
- ½ cup applesauce
Instructions
- Mix together all ingredients in a mixing bowl until no clumps remain.
- Heat waffle iron and cook batter.

These are the best waffles, I made them Sunday morning before church. They also make great pancakes.
