Easy Pumpkin Pudding
Can I just tell you how happy I am that fall is finally here? The deadly summer heat is gone, and my favorite flavors are back. I know I’ve been gushing in post after post since the heat finally broke, but making this pumpkin pudding today reminded me of how lucky I am to “live in a world where there are Octobers” (bonus points if you know what book that’s from!).
This recipe is quick and easy (in fact, I learned to make it at a Kindergarten harvest party), but the result is delicious. It’s a thick, rich pudding mixed with heavenly-smelling spices and topped with whipped cream. Everything is better topped with whipped cream. Don’t argue. Just accept it.
Incidentally, this is also the first time I have tried to make a recipe video. I could use a little work on my videography skills (read: a LOT of work), but I’ll throw it up here for you visual types (and you types who could use a good laugh today!). As always, the written recipe is below. From start to finish, this takes about 20 minutes, but that’s mostly because of the chilling times. Hands on time is less than 5 minutes – super easy, super quick!
Easy Pumpkin Pudding
Ingredients
- 5.1 oz pkg vanilla instant pudding
- 1 can 12 oz evaporated milk
- 1 can 15 oz pumpkin puree
- 1 tsp pumpkin pie spice
- whipped cream
Instructions
- In a bowl, mix together pudding and milk according to package instructions.
- Chill in refrigerator for 5 minutes to thicken.
- Add pumpkin puree and pumpkin pie spice. Mix until fully incorporated.
- Chill in refrigerator for 10 minutes.
- Spoon into serving bowls and top with whipped cream. Enjoy!

How much of the pudding mix? You wrote 1 51/10oz. Measuring cup size? Or measuring spoon size please would be so helpful. I don’t know how to measure 1/10 if that’s what you wrote.

That’s a single 5.1 oz package of vanilla instant pudding. I can see how the way the measurement is written is confusing — thanks for the feedback and hope this helps!
I cannot find 5.1 oz boxes of instant pudding. The large boxes are 2.1 oz and small boxes are 1oz. Was this a typo, or are there 5.1 oz boxes?
5.1 is a standard box size where I live. I’d recommend three 1 oz boxes + one 2.1 oz box to get the same weight.
Hi Carol. I think you’re reading the size of the box of pudding. It’s one regular size box, made with 2 cups of milk. I hope this helps.
