Burrito Bowls
Looking for a nice, simple dinner that doesn’t require you to slave over the stove in this heat? Gotcha covered. This colorful, flavorful bowl full of healthy nutrients can be made in the rice cooker. It’s literally dump, top, and serve. This is my favorite type of dinner: tasty, easy, and healthy!
The base is made of rice corn, and beans, and the toppings can include just about anything you want. I like to add fresh tomatoes to mine, and my husband likes bell pepper. We both do onions, salsa, and sour cream. Guacamole, ranch dressing, tortilla chips – dress it up any way you like! It’s pretty hard to go wrong with this.
Burrito Bowls
Ingredients
- 1 cup uncooked rice
- 1 can diced tomatoes
- 1 cup water
- ½ cup salsa
- 1 can pinto beans rinsed and drained
- 1 can corn rinsed and drained
- toppings
Instructions
- In a rice cooker, combine the rice, water, tomatoes, and salsa. Allow the rice cooker to cook until done.
- Serve the rice mixture topped with beans, corn, and desired toppings.
- Enjoy!

I love making burrito bowls at home. You can put in whatever you want and control the quantities. I haven’t been out to a restaurant to have one in a while cause when I get the urge I just go to the kitchen. Yours looks good too.
