Quiche with Rice Crust

Ingredients

Rice Crust

  • 2 cups cooked rice
  • cup cheese
  • 1 egg

Filling

  • 4 eggs
  • cup cheese
  • 1 cup milk
  • salt and pepper to taste
  • additional fillings chopped meats, vegetables, herbs, etc

Instructions

Crust

  • In a mixing bowl, mix together ingredients.
  • Press into an ungreased pie pan, making sure the crust covers the bottom and sides fully.
  • Bake at 425° for 15-20 minutes.

Quiche

  • Beat together eggs and milk. Add salt and pepper to taste.
  • Place cheese and fillings in the bottom of crust (or pan, if making a crust-less quiche).
  • Pour egg mixture over the top of fillings.
  • Bake at 350° for 35-40 minutes or until filling is set.
  • Allow quiche to cool slightly before serving.

Notes

If you want to be fancy, there are a few recognized versions including:
Quiche Lorraine - made with cheddar and bacon
Quiche Florentine - spinach
Quiche Provencale - tomatoes
Quiche aux Fromage - egg and cheese only
Quiche aux Champignons - mushrooms
