Cinnamon Chip Bread

Ingredients

  • ¼ cup warm water
  • 1 Tbsp yeast
  • 2 cups milk scalded
  • 3 Tbsp sugar
  • 3 Tbsp oil
  • ¾ cup cold water
  • 7 cups flour
  • 1 cup cinnamon chips

Instructions

  • In a bowl, proof yeast in warm water.
  • In large mixing bowl, mix together oil and sugar.
  • Add milk and cold water to mixing bowl and mix together.
  • Add yeast mixture to milk mixture and stir.
  • Add flour cup by cup, mixing in.
  • Knead using dough hook for 10 minutes or until dough is elastic.
  • Turn dough out onto floured surface and split into two.
  • Roll out each section into a rectangle, then spread with cinnamon chips.
  • Roll up each rectangle, then form into a loaf.
  • Place into greased loaf pan and allow to rise for 40 minutes to 1 hour.
  • Bake at 375° for 10 minutes, then drop temperature and bake at 325° for 20-25 minutes.
