A lightened up version of the Olive Garden favorite!

Ingredients
1chicken breastchopped and cooked
2Tbspbutter
2Tbspolive oil
12ozevaporated milk
1cupwater
1chicken bouillon cube
1Tbspcornstarchdissolved in 1/4 cup warm water
1tspgarlic powder
½cupshredded carrots
1small oniondiced
1cupspinach chopped
½tspthyme
1pkg gnocchi
Instructions
In a saucepan, melt the butter and heat the oil.
Saute onion and carrot until onion is translucent.
Add chicken, milk, water, bouillon, cornstarch, garlic, and thyme. Bring to a boil, then reduce heat and allow to simmer for 10 minutes, stirring frequently.
In the meantime, make gnocchi according to package instructions. When gnocchi is done, add gnocchi and spinach to the soup and allow to simmer for another 2-3 minutes, stirring frequently.
