Ginger Molasses Cookies (Talkeetna Roadhouse Copycat)

Soft, chewy molasses cookies with a hint of tangy ginger!

Ingredients

  • ¾ cup butter
  • 1 cup sugar
  • 1 egg
  • ¼ cup molasses
  • 2 ⅓ cups flour
  • 2 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp cloves
  • ½ tsp ginger
  • ½ cup sugar for rolling dough

Instructions

  • Whip butter and 1 cup sugar together until creamy.
  • Add egg and molasses and mix.
  • Stir in flour, baking soda, salt, cinnamon, cloves, and ginger. Mix.
  • Roll dough into balls and roll in 1/2 cup sugar. Place sugared dough balls on baking sheet.
  • Bake at 375 ° for 8-10 minutes.

Notes

Notes:
Talkeetna Roadhouse cookies are large and flat. To get that shape, just flatten the dough balls a little with your hands before baking. They will spread out and give you the larger, flatter cookie.
Taking these out before they're fully done and letting them develop on the sheet is the best way to make sure you get a soft, chewy cookie.
