Apple Fritter Quick Bread

Ingredients

Bread

  • cup white sugar
  • ½ cup butter softened
  • 2 eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ¾ teaspoons baking powder
  • ½ cup milk
  • 2 apples

Topping

  • cup light brown sugar
  • 1 teaspoon ground cinnamon

Glaze

  • ½ cup powdered sugar
  • 1-3 Tbsp milk

Instructions

Bread

  • Cream butter and sugar, then add eggs and vanilla and mix well.
  • Add flour and baking powder and mix.
  • Mix in milk until batter is smooth.
  • In a separate bowl, mix together topping ingredients.
  • Peel and chop apples.
  • Spread half the batter in a greased loaf pan.
  • Cover batter with half of apples and half of topping mix.
  • Spread the rest of the batter over the cinnamon and topping.
  • Top with rest of apples and topping mix.
  • Bake at 350 for 50-60 minutes.

Glaze

  • In a bowl, add milk 1 Tbsp at a time to the powdered sugar until you reach the desired consistency.
  • Drizzle over cooled bread.

Notes

Note:
If making mini-loaves, lower the temperature to 325° and bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.
