Thanksgiving is this week, and do you know what you’re making? Thankfully, I do. Three years ago, I made my first Thanksgiving dinner, and I have no intention of changing anything on the menu. Except for one thing. This year, there’ll be more mouths to feed, so I’m going to add a few more desserts to the table. Usually, we only get one pie. I know, right? But there was only my husband and myself to eat it, so that was just about the right amount. <\/p>\n

With so many more folks joining us this year, I’m definitely going to need more to work with. I’ll let you in on a secret — I hate pies. I do not have the touch. We usually have a no-bake chocolate pie with a graham cracker crust so that I can avoid the terror that is pie making. <\/p>\n

Which is where this recipe comes in. While it’s not the traditional apple pie, this macaroon has everything else going for it. It’s easy, it’s delicious, and, if you ask me, it tastes a lot like apple pie. It’s also kind of beautiful:<\/p>\n

Let me return to the easy part of this. You slice the apples, sprinkle on some cinnamon sugar, mix together the dough ingredients, pour them over the apples, and bake. No chilling, rolling, cutting in butter, shaping, crimping, filling, or any of those words that send shivers down my spine. Easiest thing ever. Seriously. If you’re looking to add dessert without stress, this is your recipe.<\/p>\n
