Well folks, we’ve come to the end of the 6 Week Challenge Recipes<\/a>. For those who aren’t following along, my husband and I lost a combined 45 lbs over the course of 6 weeks just by changing our diet. I’ve been blogging the recipes we used along the way (you can find them here<\/a>). <\/p>\n

We discovered this chicken salad towards the end of our challenge, and I am so glad we did. This is an adaptation of someone else’s recipe that I can’t find again. If this looks somewhat familiar to you, I’d love to credit the original!<\/p>\n

I did make some pretty hefty changes to bring it in line with our diet, but the flavor on this is absolutely delicious. I also love that I can just throw chicken in the crockpot at the beginning of the week, then toss it in this sauce to create a completely different flavor. <\/p>\n
