Welcome to the kick off of cut-out cookies month! For the next few weeks, I will be sharing my favorite cut-out cookie recipes to make your holiday baking a breeze.

And, in order to make it even more of a breeze, all of the recipes will nix the whole “chill for 3-5 hours” stuff. I hate, like passionately, irrationally hate, chilling dough. It messes with my groove, man. I do not like Christmas baking to take hours and hours. I am a fan of roughly 15 minutes per batch of cookies. And that’s what this no-chill, no-spread chocolate cut out cookie recipe promises.

The secret is to remove the leavening from the recipe. This means that anything with baking in front of it is out the door. No baking powder, no baking soda. This keeps the cookies from trying to rise, and therefore, from spreading everywhere and become some sort of behemoth-that-once-was-a-snowman cookie. These cookies hold their form perfectly as demonstrated by this picture.

Also, don’t you just love those snowy pinecones in the background? They’re super easy to make, and kind of adorable.

These cookies also nail it in the taste department (a must here at the Homan home). They’ve got a deep chocolate flavor (I always make it deeper by making them with dark chocolate cocoa), and they’re not too sweet, which means they’re perfect with a little icing on top. They’re soft on the inside, but firm enough for decorating. Basically, guys, this is the cut out cookie you’ve been waiting for.
