Sundays in college always started with my roommate Melissa’s amazing waffles. They were light, fluffy, and deliciously golden. She gave me her recipe and I recently came across it in one of my old cookbooks. I made them and they were just as incredible as I remembered, but then I found the catch. Each one cost me somewhere around 400 calories (eeeek!). That’s before<\/em> adding any toppings.<\/p>\n

Experimentation ensued, and the recipe below is still fluffy and tasty, but comes in at a more reasonable 230 calories per serving. Add a little peanut butter and some strawberries, and you have a delicious 400 calorie breakfast.<\/p>\n
