\nZucchini fries are fast becoming my new favorite side. Not only do we have a very, very large supply of zucchini (who knew one plant could make so much?), but these are so darn easy, and they up our vegetable intake. They a great replacement for potato-based fries. Not that they taste the same, but they’re finger foods, and tasty in their own right, so it works out pretty well. <\/p>\n

I’ve never really liked zucchini outside of bread and cakes – it has basically no flavor, if you ask me. So it was with great reservations I made an attempt at these. However, with the parmesan cheese, garlic, and pepper, lack of flavor is no problem at all.

Just a tip we’ve noticed: these taste best fresh, and aren’t the best at keeping overnight in the fridge. As much as my family has liked them, though, that hasn’t been much of a problem!<\/p>\n
