Friday night pizza is sort of sacred in our house, but with the crazy heat wave we’ve been having lately, I just don’t want to cook. Like at all. Ever. Not even pizza. All I want to do is huddle in the back room with our window-unit air conditioner blasting and never ever come out. They probably can deliver pizza to the window, right? <\/p>\n
Anyway, this pita pizza is my compromise. It gets broiled, so the oven is only on 5 minutes tops and it really doesn’t warm the house at all. It also satisfies Alex’s need for pizza – trust me, the last thing you want to do is set up a 2 year old’s expectations of fun food, then dash them. The whining is intense. <\/p>\n
Incidentally, this also fits in with my goals. I haven’t shared much about this, but I’ve been working on losing weight for some time. After Faith, I weighed 50 lbs more than I ever had before. Yep, you read that right. 50 lbs.<\/p>\n
Getting up and down off the floor was difficult, as was keeping up with my kids. This is from the girl who was an aerobics instructor, half-marathon runner, yoga enthusiast, and multiple Beachbody program graduate. Being slow and tired was kind of a new thing for me, and I can’t say I liked it.<\/p>\n
In fact, I was pretty upset, and so we’ve made some big changes to the way we eat and to our activity levels. I actually changed up my favorite pizza recipe<\/a> for these pita pizzas about two months ago as a way of making pizza Friday healthier and more in line with the way I wanted to live. Regular pepperonis gave way to turkey pepperonis, and maybe I have no taste buds, but I really can’t tell the difference, and they’re the same price at Walmart. <\/p>\n <\/p>\n I’m down 30 lbs as of this writing, and much more fit. I can get up and down off the floor, and while I think trying to keep up with Alex might tax even the people on American Ninja Warrior, I’m doing better. I’m a heck of a lot happier – that’s for sure. And I won’t give all the credit to these lovely little personal pizzas, but hey, they sure didn’t hurt things, right? \ud83d\ude42<\/p>\n Oh, and in case you’re wondering, My Fitness Pal tells me they’re 343 calories per pizza. <\/p>\n <\/p>\n
