I am very sad that Mothers Day – and these brownie parfaits – are over. This was my Mothers Day dessert, made by Daddy and Alex, and it was amazing! They baked some gooey Pauline’s Brownies, let them cool, then broke them up, added some pudding and whipped cream. They shaved some chocolate to top them, which made a giant mess that they were good enough to clean up. It went with the tacos Daddy so kindly cooked. Oh, and I also got to sleep in, so you can see why I’m sad to see it go 🙂

I also got this adorable butterfly. The top hands are Alex’s, and the bottom ones belong to Faith. It’s just too cute!

Anyway, back to the parfaits. These are super simple and you can even use store-bought brownies to make them faster. This is also a great way to salvage brownies that stuck to the pan since you’re just going to break them up anyway. Brownie Parfaits are also something kids can make, and they’re the perfect personal dessert!
