Homemade pancakes are a great way to start the day, and if any of you read this blog often, you know I love to top them with homemade syrups. We’ve already covered buttermilk syrup, fruit syrup, and now, drumroll please, I’d like to share this gorgeous apple syrup. It’s super simple (made from apple juice – no slicing or dicing necessary!). It’s cinnamony, it’s sweet, it’s got a lovely light tang, and of course, it’s absolutely perfect for these slightly cooler fall mornings.

I love to add fried apples to the top of my pancakes stack before I drizzle my apple syrup all over. Fried apples are super easy – just peel and dice a couple apples (I like Granny Smith for the tartness), throw them in a frying pan, melt a tablespoon or two of butter, drizzle a little lemon juice, and add a tablespoon of granulated and one of brown sugar. Then you just let the apples fry until they’re soft and covered in melted butter and sugar. If I had to pick a favorite breakfast, apple syrup with fried apples on Old Fashioned Pancakes would definitely top the list!
