For those who took the clean eating challenge<\/a>, how’s it going? Feeling better? More energy?<\/p>\n

Definite yes from me – I always get bogged down around Christmas. All the parties and the goodies means the exercise and eating well goes out the door. In some ways, it’s a relief for January to finally kick in. I can recommit to better food habits, and hit the gym with all the other resolutioners.<\/p>\n

*Rant alert*<\/em> By the way, if you’re a resolutioner, don’t let the regular gym people make you feel bad about it. You’re doing something tough, and that is awesome. Setting a goal and working towards it is the best gift you can give yourself – way to be on the right track \ud83d\ude42 So here’s my pep talk – Achieve your goals! Go! Fight! Win! And tell me about it when you get home. I do so love these little chats, darling (points if you know the movie). *Rant over*<\/em><\/p>\n

\"Italian<\/a><\/p>\n

Not only does it look, smell, and taste incredible, Italian Chicken Skillet is easy to throw together and pretty darn healthy. It’s rapidly become a favorite around our house.<\/p>\n

Basically, I set out to make a copycat recipe for the Noodles & Co. Alfredo Monte Amor bowl, but got distracted and came up with an Italian Chicken Skillet instead. Frozen chicken breasts, canned tomatoes and frozen peppers make this an easy throw-together meal. The flavors are fresh, though, and your waistline will thank you as well as your taste buds!<\/p>\n
