Soft, buttery, chewy molasses cookies with just a hint of ginger. I used to think you could only get them from the Roadhouse in Talkeetna, Alaska – one of the best-kept secrets in Alaska. Not true anymore! These cookies taste just like the Roadhouse special, and you can make them in your own home – no travel necessary!

And did I mention these come out gigantic? Well, they do. They’re bakery-sized, and they keep that soft chewiness that I love. Most of these kind of cookies that I’ve had have been crunchy, which isn’t necessarily bad, but when I tasted the soft version of a ginger molasses cookie, I was hooked!

These cookies are rich, so they go perfectly with a glass of milk. As the weather gets cooler, you might also consider pairing them with hot chocolate or apple cider!
