One pan, 5 minutes of hands-on time, and a delicious and healthy dinner. What’s not to like about sheet pan sausage and gnocchi?

Who has time to concoct elaborate dinners on Tuesday nights? Not me! This recipe has been my go-to for the past few months. It takes me about 5 minutes to throw together, and then I can leave it in the oven while I take care of other things. Clean up is a breeze too!

The best part is what you get out of it, though. The flavors are rich and savory — the sausage lends just the right blend of smoky and sweet to the base of gnocchi. Adding a drizzle of pesto elevates this to a dinner you can be proud of!

What do I need?

Sausage: I love, love, love chicken apple sausage for this. It’s relatively healthy, and the sweet flavor the apple adds is just *chef’s kiss*!

Gnocchi: We have made this with many different kinds of gnocchi, including just plain ol’ potato gnocchi you can get from any store. My favorite by far, though, is the Trader Joe’s sweet potato gnocchi. It’s a gorgeous orange color, which, with the green of the pesto, makes me feel like some kind of gourmet.

Olive Oil

Garlic Powder and Italian Seasoning

Covered Baking Sheet: I cover mine with foil, then spray a little cooking spray on so the gnocchis don’t stick. A silicon baking sheet liner would work well too!

Pesto (optional)

How do I make Sheet Pan Sausage and Gnocchi?

Start by chopping the sausage into 1/4 inch thick coins.

Dump the sausage and gnocchi into a large bowl. Then, drizzle with olive oil. Be careful not to use too much — a light hand is good here, otherwise you get oil-drenched gnocchis. I doubt that’s the texture you’re looking for!

Shake on the garlic powder and Italian seasoning, then use your hands to toss the whole thing. You want all your little sausages and gnocchis to be coated with seasoning and oil.

Dump everything onto the covered baking sheet. You’ll want to separate it all out into one level so that everything cooks evenly.

Then you get to bake. I spend the time cleaning up and making a side salad to go with this. You don’t need much to make this a meal — just add a veggie side, and you’ve got a balanced dinner!

When you serve your meal, you can either drizzle pesto over it, or put the pesto on the table for your guests to serve themselves. So. Dang. Good.
