Pumpkin Streusel Snack Cake
I’m back making snack cakes again. Someone stop me – they’re so addicting! This one might be my favorite so far (I don’t know, applesauce is pretty darn amazing…)
The thing that sets this one apart is not the lovely and moist pumpkin base, but that gorgeous buttery streusel on top. I’ve been on a streusel kick lately, so don’t be surprised if I just streusel all the things for the next little bit. You’re welcome.
And this streusel is the best. The secret is to melt the butter before mixing it in. Most recipes I see have you cut in cold butter, but if you use melted butter, the streusel makes those glorious crumbs. And that is most definitely what we want to see!
I did top this with some vanilla glaze for the pictures, but in real life, I probably would leave it off. The cake and topping are sweet enough, the glaze felt a little like overkill – although if you’ve got a crazy sweet tooth, go for it! It’s a standard vanilla glaze – 1 cup powdered sugar and 1 Tbsp water or milk.
Oh, the other thing is that this cake is made from my snack cake mix. I LOVE this stuff. One recipe of the mix makes 6 mixes, which is oh-so-dangerous! With the addition of a few pantry essentials, you can make a bunch of different flavored cakes in literally minutes. So far, I’ve made double chocolate, lemon, applesauce, and now this pumpkin. Snack Cake Mix
Ingredients
- 8 cups flour
- 6 cups sugar
- 2 Tbsp baking soda
- 1 Tbsp salt
Instructions
- In a large mixing bowl, mix together all ingredients until well combined.
- Scoop 2 1/4 cups mix into each quart-sized zip-top baggies and seal. Makes 6 mixes.

Ingredients
Pumpkin Cake
- 1 pkg mix
- 1 egg
- â…“ cup oil
- ½ cup pumpkin puree
- ½ cup milk
- ½ tsp cinnamon
Streusel
- â…“ cup granulated sugar
- â…“ cup brown sugar
- 1 tsp cinnamon
- ½ cup butter or margarine
- 1 ½ cups flour
Instructions
- Mix together all ingredients for cake.
- Pour into greased 9x9 pan.
- Melt butter, then mix together all ingredients for the streusel.
- Sprinkle streusel evenly on top of cake.
- Bake at 350° for 25-30 minutes or until toothpick inserted in center comes out clean.
