We don’t eat entire chicken breasts usually because of the cost, but Sunday nights call for something special, and this barbecue chicken is the one we usually reach for. I love it because I it only takes a few ingredients and I can toss it in the slow cooker and forget about it until it’s time to eat. There’s no other prep – not even taking the chicken out and shredding it.
This is also good shredded and on top of a salad – the way we usually eat it for leftovers. I’ve never mastered the art of microwaving chicken and getting it to not be like an eraser when I finish, so shredding it is my solution. We usually put it on a bed of lettuce with tomato, corn, black beans, and cheese. So good!
