Italian Chicken Skillet
For those who took the clean eating challenge, how’s it going? Feeling better? More energy?
Definite yes from me – I always get bogged down around Christmas. All the parties and the goodies means the exercise and eating well goes out the door. In some ways, it’s a relief for January to finally kick in. I can recommit to better food habits, and hit the gym with all the other resolutioners.
*Rant alert* By the way, if you’re a resolutioner, don’t let the regular gym people make you feel bad about it. You’re doing something tough, and that is awesome. Setting a goal and working towards it is the best gift you can give yourself – way to be on the right track 🙂 So here’s my pep talk – Achieve your goals! Go! Fight! Win! And tell me about it when you get home. I do so love these little chats, darling (points if you know the movie). *Rant over*

Not only does it look, smell, and taste incredible, Italian Chicken Skillet is easy to throw together and pretty darn healthy. It’s rapidly become a favorite around our house.
Basically, I set out to make a copycat recipe for the Noodles & Co. Alfredo Monte Amor bowl, but got distracted and came up with an Italian Chicken Skillet instead. Frozen chicken breasts, canned tomatoes and frozen peppers make this an easy throw-together meal. The flavors are fresh, though, and your waistline will thank you as well as your taste buds!

Italian Chicken Skillet
Ingredients
- 1 large chicken breast chopped
- ½ cup bell pepper chopped
- ½ cup onion chopped
- 1 can diced tomatoes
- 1 cup water
- 1 chicken bouillon cube
- 2 cups spaghetti noodles cooked
- 1 Tbsp olive oil
- ½ cup parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ tsp seasoned salt
- pepper to taste
Instructions
- Heat oil in a skillet. Cook chicken in spices until done.
- Add peppers, onions, and tomatoes, water, and bouillon cube.
- Break noodles into small pieces and add to skillet. Bring to boil and allow to simmer 10-15 minutes until noodles are cooked.
- Top with parmesan cheese and serve.
