Black Bean Burgers
Several years ago, I got invited to a dinner. The hostess served black bean burgers, which I was a little leery of until I bit into one. They were delicious with a strong spicy flavor. I have always regretted not getting her recipe.
Pinterest is amazing, though, and this recipe captures the spiciness I loved so much. These burgers are also pretty guiltless, being so high in fiber and low in calories. Healthy never tasted so good!
Black Bean Burgers
Ingredients
- 1 can black beans
- 1 green bell pepper
- ½ onion
- 1 tsp garlic
- 1 egg beaten
- 1 Tbsp chili powder
- 1 Tbsp cumin
- ½ tsp hot sauce
- 1 ½ tsp taco seasoning
- 1 tsp cayenne pepper optional
- 1/2-2 cups bread crumbs

- Smash black beans to form a paste. In a food processor, blend the bell pepper and onion. Add to black beans. Add all ingredients except bread crumbs and mix well. Add bread crumbs 1/2 cup at a time until paste can be made into patties. Form into patties and bake at 350° for 15 minutes. Serves 8.

Start by chopping the pepper and onion up into chunks to put in your food processor. Then – surprise! – put the chunks in your food processor and pulse until you have a smooth, somewhat watery paste. Add this to your beans.
Your next step is to mash the beans either with a fork, or, if you’re impatient like me, in your food processor. Don’t mash them up too much, though, you want some bean bits in your paste.
After that, mix in the hot sauce, egg, and spices. Add the bread crumbs in 1/2 cup increments. You only want to add as much as you need for the paste to turn into something you can form into patties.
Then you get to form your mixture into patties. This should make 8 pretty good sized burgers.
Bake your burgers at 350° for 15 minutes. Serve on a bun or in a lettuce wrap!
