Through the years I’ve met many folks who are … less than confident about cooking fish. I’m no pro, but I make a mean baked salmon, and it’s one of the easiest dishes I know how to prepare. Squirt some lemon juice, shake a few spices, add a pat of butter, and bake until flaky. It tastes delicious, and looks gourmet!
And did I mention how healthy it is? That gorgeous lemon flavor is good for you too. And of course we all know about the omega-3 fatty acids rolling around in the salmon itself. This is a dish you can eat again and again, and your body will thank you for it!

Cream together
1/4 cup finely chopped macadamia nuts
1/4 cup finely chopped cilantro
4 Tbl butter
Rub on top side of salmon and bake at 450 degrees for 15 minutes or until salmon is done.

I’ve enjoyed this recipe for years. You can use pecans in place of the macadamia nuts and it’s just as good.
