Slow Cooker Olive Garden Copycat Zuppa Toscana

My brother got married over this Christmas break, and Mom decided that we would cater his reception ourselves. Her idea? Copycat Olive Garden. We gathered slow-cooker versions of the Pasta e Fagioli and Zuppa Toscana soups, added some salad tossed with copycat Olive Garden dressing, and a few breadsticks.

The day of was as easy as throwing the soups in the crockpots, letting them cook, and then placing them on the table for folks to enjoy. Much cheaper than paying someone, extremely delicious, and really not that stressful in the end.

My favorite of the two soups is the Zuppa Toscana. This slow-cooker recipe came from Stockpiling Moms blog contributor Melissa Jennings. It throws together fast and uses extremely cheap ingredients to create a dinner that doesn’t taste cheap at all!

Slow Cooker Olive Garden Copycat Zuppa Toscana

A super simple way to enjoy the Olive Garden classic at home!

Cook Time 6 hours
Total Time 6 hours 15 minutes
Servings 8

Ingredients

  • ½ bag frozen hashbrowns
  • 1 lb browned Italian sausage
  • 5 ½ cups water
  • 5 chicken bouillon cubes
  • 2 cups chopped kale
  • ½ tsp red pepper flakes
  • 1 diced onion
  • 2 Tbsp minced garlic
  • ½ cup evaporated milk

Instructions

  • Put all ingredients except kale and evaporated milk in the crockpot.
  • Allow to cook on low for 6-8 hours, or on high for 3-4 hours.
  • 30 minutes before serving, add in kale and milk and allow to cook.
  • Serve with grated parmesan cheese.
