I’m not actually the biggest advocate of the whole hide-veggies-so-kids-will-eat-them school of thought. I’m no pro, but I’m working super hard on teaching my (very picky) kiddo how to eat a variety of food (see Garlic Butter Green Beans and Garlic Parmesan Roasted Carrots for some of my veggie attempts). These popsicles are so yummy, though, and they are a great way to punch up your nutrition goals with two servings of fruit and one of veggies in each popsicle. I guess I just figure that if the kids and I are going to eat popsicles, we might as well get some nutritional value out of it!

The two flavors you see in the picture are strawberry and blueberry, although this recipe works for every frozen fruit mix I’ve ever tried. The spinach pieces are more visible in things like mango pineapple, though, so if you have a picky eater, beware.

My son actually loves making these. One of his favorite things in the world is to push the button on the top of the Ninja and make it cut up the stuff inside. He’s a pretty big fan of spooning the smoothie into the popsicle molds as well, so this is definitely a recipe kids can help out on 🙂

Fruit and Veggie Smoothie Popsicles

One serving of veggies and two of fruits in every pop!
Servings 8

Ingredients

  • 2 cups frozen fruit
  • 2 cups spinach
  • ½ - 1 cup juice

Instructions

  • In a blender, blend all ingredients. Add more juice until desired consistency is reached. Smoothie will be slightly thick.
  • Spoon smoothie into popsicle mold and replace sticks.
  • Freeze for 2-4 hours or until hard.
  • Remove by running under warm water for a minute.

Notes

You can mix up your frozen fruit any way you like. To make blueberry or raspberry, I usually start with 1 1/2 cups strawberry and add in 1/2 cup blueberry or raspberry. You can also change up your juice - strawberry fruit with pineapple juice is a huge hit at our house!
