Daniel Tiger’s Neighborhood has a lot to answer for around here. Whether it’s the fact that visitors to our house have to stay sharp or risk getting hit in the face by an overenthusiastic “animal ball player” who’s screaming “The cow goes, ‘MOOOOO!'” or the constant need to make banana swirl, a large portion of our toddler’s life is currently dictated by that show. Right now, Alex has been hit by an insatiable need for “pic-mics” outside. Every meal. Every day. 

So I’m getting pretty good at picnicking even not-normal picnic foods. Mason jars. That’s the key. You can take individual jars and just shove something that tastes good cold in there and voila! Picnic in a jar.

Right now, my favorite combination is the one above. The entree is actually just Lemon Garlic Pasta served cold, which tastes just as good as Lemon Garlic Pasta served hot, in my opinion. I included a salad for health’s sake, and then added a dessert – strawberry shortcake. All the recipes are below, and they make a pretty nice little meal!

 

Lemon Garlic Pasta

Ingredients
  1. 1 chicken breast, chopped (feel free to use leftovers)
  2. 2 tomatoes, chopped
  3. 1 cup spinach, chopped
  4. 2 cups penne pasta
  5. 2 Tbsp butter or margarine
  6. 1-2 Tbsp lemon juice
  7. 1 tsp garlic powder
  8. salt and pepper to taste
Instructions
  1. In a skillet, cook your chicken until white all through.
  2. While chicken is cooking, cook and drain pasta according to directions on package.
  3. Once chicken is done, toss in tomatoes and spinach and heat through.
  4. Add in pasta, butter, garlic powder, and lemon juice. Allow butter to melt and make sure sauce completely coats everything.
  5. Add salt and pepper to taste.

Strawberry Shortcake (Light)

Ingredients
  1. 1 Angelfood cake
  2. 1 cup strawberries
  3. whipped cream
Instructions
  1. Cut cake into small squares. Layer squares on the bottom of jar.
  2. Squash strawberries. Spoon strawberries over cake.
  3. Top with whipped cream and seal.
