It’s lemon time again! Lemon is the ultimate spring flavor in my book. It’s light, it’s fresh, and it’s such a gorgeous pale yellow color – in other words, it just screams springtime!
This lemon snack cake is a one-bowl dessert that whips up in minutes. It makes use of my snack cake mix (you can find the recipe here). If you keep a few packages of mix around, you can have this puppy in the oven in five minutes.
I made this recipe using only lemon juice since I can’t find dried lemon zest anywhere around here, and my goal was to make a cake that I would always have the stuff for. I don’t buy lemons that often (during some seasons, they are seriously expensive). The juice gives the cake a strong lemon flavor, which I love. The texture of this one is slightly more dense than the chocolate snack cake, which surprisingly, I found I like. It’s kind of moist and crumbly, and the melted white chocolate chips on top compliment the lemon flavor perfectly.
