Valentines is over, and we are back to our regularly scheduled activities, folks. Sorrynotsorry since that means I get to share these amazing wraps with you. They’re super simple to make, pretty darn healthy, and bursting with flavor and color. I’m especially loving that color right now with all this grey and rainy winter weather we’re having here.
And the taste! Don’t get me started. Oh wait, too late. The chicken has a a lovely tang from the lime juice that is set off perfectly by the smoky hotness of the chipotle mayo. These wraps are spicy, they’re creamy, they’re fresh, they’re fast, and I’m starting to wonder why I don’t have one in my hand 🙂
As a note, the recipe calls for marinating the chicken. It’s best that way, but if the marinade is taking too long for your schedule, you can just throw the chicken in a frying pan with all the marinade ingredients. It won’t be quite as tender, but you can still get that delicious flavor with a major cut in time. Your call!
