S’mores Cookies

One last s’mores post, I promise! These s’mores cookies are just so good, I had to share. A super simple twist on the classic chocolate chip cookie recipe brings graham cracker flavor to the cookie base. Throw in some mini-marshmallows and chocolate chips and you can get your s’mores fix even if you can’t kick back and roast marshmallows around a campfire.

Ingredients
  1. 2/3 cup butter
  2. 2/3 cup shortening
  3. 1 cup granulated sugar
  4. 1 cup brown sugar
  5. 2 eggs
  6. 2 tsp vanilla
  7. 1 tsp salt
  8. 1 tsp baking soda
  9. 1 tsp cinnamon
  10. 3 cups flour
  11. 12 oz chocolate chips
  12. 3/4 cups mini marshmallows
Instructions
  1. Beat butter, shortening, sugars, eggs, and vanilla.
  2. Mix in salt, baking soda, cinnamon, and flour. A
  3. dd chocolate chips and marshmallows.
  4. Drop by rounded spoonfuls onto greased baking sheet.
  5. Bake for 8-10 minutes at 375° Makes 3 dozen.
Notes
  1. You can either add the marshmallows in before baking, as in the instructions, or press them in during the last minute or so of baking.

Whip together your butter, shortening, and sugars. Then add in the vanilla and eggs.

Next, add the dry ingredients. Cinnamon is the secret to making these cookies taste like graham crackers. Mix everything together – except maybe the mini-marshmallows (see below).

Now, there are two schools of thought on this next part. For the pictures I took, I did not mix the mini-marshmallows into the dough. Instead, I placed them on the cookies for the last two minutes of baking, which is how you get the nice toasted look.

Normally, I don’t go through all that trouble. I just mix the marshmallows into the dough, then drop by rounded spoonfuls onto the cookie sheet and bake. The cookies don’t look so pretty, but the marshmallows melt and give the cookies a soft, moist texture, which I like. Either way, the cookies taste amazing!
