We love Mexican at our house, and Mexican is not necessarily the most weight-loss goal friendly food around. It is definitely some of the most flavorful, though, and so that brings us to the conundrum: how do we keep the amazing taste, but drop the gigantic calorie load?
I found this “healthified” enchilada recipe on My Recipe Magic, and while it had a list of ingredients, the link to the instructions was faulty. I decided I liked the ingredient list, and made up some instructions of my own. We loved the result. With the substitution of cottage cheese for the standard cheddar, this recipe lost a ton of calories, as well as took a cut in fat content. These are beef enchiladas you do not have to feel guilty about eating!
