We love Mexican at our house, and Mexican is not necessarily the most weight-loss goal friendly food around. It is definitely some of the most flavorful, though, and so that brings us to the conundrum: how do we keep the amazing taste, but drop the gigantic calorie load?

I found this “healthified” enchilada recipe on My Recipe Magic, and while it had a list of ingredients, the link to the instructions was faulty. I decided I liked the ingredient list, and made up some instructions of my own. We loved the result. With the substitution of cottage cheese for the standard cheddar, this recipe lost a ton of calories, as well as took a cut in fat content. These are beef enchiladas you do not have to feel guilty about eating!

Ingredients
  1. 2/3 cup cottage cheese
  2. 1 lb ground beef
  3. 1/4 cup taco seasoning
  4. 1/2 cup water
  5. 8 tortillas
  6. 1/2 cup grated cheese
  7. 1 can enchilada sauce
Instructions
  1. In a pan, brown ground beef. Add water and taco seasoning and allow to simmer for 2-3 minutes.
  2. Add cottage cheese and stir in until melted.
  3. Fill tortillas with meat and cheese mixture, then spoon a small amount of enchilada sauce inside. Fold and place filled tortillas in a 13x9 baking dish.
  4. Cover with remaining sauce and grated cheese.
  5. Bake at 350° for 10 minutes covered, then an additional 5 uncovered.
