I have Six Sisters’ Stuff to thank for this one. This enchilada skillet meal was delicious and the perfect opportunity to try out my new homemade enchilada sauce.

Ingredients
  1. 2 chicken breasts OR 1 lbs ground beef
  2. 2 Tbsp taco seasoning
  3. 1/2 onion
  4. 1 can tomatoes with chilies, drained
  5. 1 can enchilada sauce
  6. 1 can black beans, rinsed and drained
  7. 1/2 teaspoon cumin
  8. 1/2 teaspoon garlic powder
  9. grated cheddar cheese
  10. tortillas to top
Instructions
  1. If using chicken, chop chicken into small pieces and saute with taco seasoning until cooked through. If using ground beef, brown and add taco seasoning.
  2. Add onions and saute until translucent.
  3. Add tomatoes, enchilada sauce, black beans, and spices. Bring to a boil, then reduce heat and allow to simmer covered fro 10 minutes.
  4. Let stand for 2 minutes.
  5. Sprinkle with cheese and tortilla chips and serve.
